During processing of milk and manufacturing of dairy products in the dairy industry, quite a lot of water is used. In general every kilogram of dairy product requires 2 - 4 liters of water and generates 0,5 - 20,5 liters of wastewater.
Dairy effluents contain typically quite some organic molecules, such as lactose, proteins and fat. In wastewater language we call this COD, chemical oxygen demand. 
In general the aim of wastewater treatment is to remove COD, TSS, TN and TP. Concentrations of these components are important for design of a wastewater treatment - or valorization plant.
The COD of dairy effluent is very well anaerobically degradable, a good source for biogas production.
